Summer healthy breakfast: Apple blueberries oatmeal

A healthy Breakfast is a great way to start the day on a positive note, especially on the weekend when I can take my sweet time chatting with my husband. Here is one of my recipes. I usually prep the baked apples before to have a sweet snack ready in the fridge when I have a sugar snack attack.

Apple Blueberries oatmeal

INGREDIENTS (2 people)

  • 2 golden apples
  • 1 cup of oatmeal
  • 1 cup of water
  • Blueberries for topping
  • Nuts for topping
  • 1 tbsp of brown sugar or honey
  • A pinch on salt
  • Cinnamon

METHOD

Baked apples:

  • Preheat oven to 350 degrees
  • Cut the apples in quarters
  • Put them in an oven plate and sprinkle with cinnamon
  • Cook for 30 to 45 minutes depending on your quarters size

Oatmeal:

  • Fill a pot with the water and bring it to a boil
  • Add the oatmeal
  • Bring the oatmeal to a simmer and stir often
  • Add the brown sugar and salt at the end

Serve the oatmeal in a bowl and top it with the apples, then some blueberries and nuts. Add some extra honey or maple syrup if needed.
